Breaking Fast at Dusk
March 2025 · King Abdullah Financial District, Riyadh
Aramco's operations team needed an iftar experience for 320 colleagues that felt like home — not a catered box meal. We pulled into the courtyard at 5pm, fired the charcoal, and had the first sambousak in hands fifteen minutes before Maghrib.

The Midnight Sambousak
November 2025 · Al Bujairi Heritage Park, Riyadh
After four hours of dancing, the wedding guests needed real food. We parked beside the heritage wall and ran a live sambousak station until 2am — crispy pastries folded to order, cardamom coffee flowing, the truck lit by brass lanterns the family brought from their grandmother's house.

Three Days at the Weekend Souk
January 2026 · Boulevard World, Riyadh Season
Riyadh Season asked us to anchor the Gulf food corner for their weekend souk. We ran three days straight — 1,200 covers across lunch and dinner, saffron rice never stopping, the smoke from the mandi pit drawing a line before we opened. Every tray photographed, every guest satisfied.

Warm bread pudding with cream, pistachios, and raisins. The dessert that always empties the tray.
Karak Chai

Strong Gulf-style milk tea brewed with cardamom, cinnamon, and condensed milk. Served in paper cups.
